Fluffy Cinnamon Pancakes with Blueberry Compote

These cinnamon pancakes are light and fluffy and super easy to make. I’ve paired them with a delicious blueberry compote and a drizzle of maple syrup.

The blueberry compote is surprisingly easy to make – you just need some frozen blueberries, sugar, lemon juice and water. If you’re trying to reduce your sugar intake, you could use stevia or some agave syrup instead to sweeten the blueberries.

For the pancakes
  1. 1 1/2 cups of flour
  2. 3 1/2 tsp of baking powder
  3. 1/2 tsp of salt
  4. 1 tsp of cinnamon
  5. 1 Tbsp of sugar or sweetener
  6. 1 1/2 cups of milk (I've used almond but you can use regular milk)
  7. 1 egg, beaten
  8. 3 Tbsp of butter, melted
  9. 1/2 tsp of vanilla extract
For the blueberry compote
  1. 2 cups of frozen blueberries
  2. 2 tsp of lemon juice
  3. 2 Tbsp of sugar or sweetener
  4. 3 Tbsp of water
Instructions
  1. For the compote, start by placing the frozen blueberries, water, lemon juice and sugar in a small pot
  2. Place over a medium heat, and bring to the boil
  3. Reduce the heat and simmer for around 15 minutes or until thickened
  4. For the pancakes, place the flour, baking powder, salt, sugar and cinnamon in a large bowl
  5. Make a well in the middle, and pour in the milk, beaten egg, melted butter and vanilla extract
  6. Stir the ingredients together until just combined, being careful not to over mix
  7. Heat a small amount of butter or oil in a frying pan over a medium heat
  8. Using a ladle, spoon in the pancake mixture and fry until bubbles appear
  9. Flip and fry the other side until golden brown
  10. Keep warm in an oven until all the pancakes are cooked
  11. Top with the blueberry compote and some maple syrup for the perfect breakfast
