Ingredients
  1. 200g of wholemeal pasta
  2. 2 cups of halved cherry tomatoes
  3. 4 - 5 garlic cloves, finely diced
  4. 1 - 2 Tbsp of olive oil
  5. 1 tsp of dried basil
  6. 1 tsp of dried oregano
  7. Salt and pepper to taste
  8. Fresh herbs for serving (optional)
Instructions
  1. Start by dicing the cherry tomatoes into half or quarters, depending on size
  2. In a medium-large pot, bring seasoned water to the boil and add the wholemeal pasta
  3. Boil for around 10 - 12 minutes, or until al dente
  4. While the pasta is cooking, add 1 tablespoon of olive oil to a pan over a low-medium heat
  5. Add the diced garlic, and sauté until the garlic starts to colour
  6. Add the dried herbs and the cherry tomatoes, stirring to coat the tomatoes in the garlic and herbs
  7. Cook the tomatoes for around 10 minutes, or until softened
  8. Remove the pasta once cooked, and drain
  9. Add the pasta and cherry tomatoes to a large serving dish
  10. Season with salt and pepper, and chopped fresh herbs (optional)
Notes
  1. You can also add some grated parmesan to the pasta before serving (or nutritional yeast if you are looking for a vegan option).
