Warm Spiced Baked Oats

Baked oats are a delicious and warming option for breakfast, especially during the wintertime. These baked oats combine apple, plum, dates, cinnamon and nutmeg for a breakfast option that is full of flavour. You could easily have this as a warm dessert option as well.

If you don’t have any plums available, you could make this with just the apple and dates. Or you could try nectarines, bananas, or rhubarb as an alternative option. Frozen berries also work well if you don’t have any fresh fruit on hand.

Ingredients
  1. 1 ½ cups of rolled oats
  2. 1 apple
  3. 2 plums
  4. 5 dried dates
  5. 2 Tbsp of maple syrup
  6. ½ tsp cinnamon
  7. ½ tsp nutmeg
  8. 3 cups of boiling water
For the topping
  1. Handful of almonds, sliced
  2. 1 tsp of sunflower seeds
  3. Drizzle of maple syrup
Instructions
  1. Pre-heat your oven to 180 degrees Celsius, or 350 degrees Fahrenheit
  2. Place the rolled oats in an ovenproof non-stick tray, and spread out evenly
  3. Dice the apple into small pieces and spread on top of the oats
  4. Slice the plums and add these on top of the oats and apple pieces
  5. Dice the dates into small pieces and sprinkle over the top
  6. Next, drizzle over the maple syrup and sprinkle the cinnamon and nutmeg on top
  7. Pour over the 3 cups of boiling water, and allow the oats to sit for 5 minutes or so to soften
  8. Place in the oven and bake for around 25 – 30 minutes, or until golden
  9. To serve, spoon into bowls and top with some sliced almonds, sunflower seeds, and a touch more maple syrup
Notes
  1. Try serving this with some Greek yoghurt or with some honey as a different option. If you were making this for dessert, some vanilla ice cream would make a delicious pairing!
